This was a good nite for this topic...I spent most of the day at Disney's Grand Floridian working with some of Disney's best chefs and reviewing some ways to incorporate easy subs for some of their guests favorite holiday goodies...

Actually we did a sliding scale for NAthan on Halloween-kind of letting him eat what he wanted(within reason) and compensated with extra H-worked great for us- will probably do that for Christmas too

Cassy (Nathan 19.5 mos,dx'd@15mos) from 216.130.4.245
Nathan is a huge grazer-likes to eat on the run-when he was first dx'd we tried the sitting down for the scheduled meal thing-he'd have none of it-so we worked with his nurses to figure out a way to make all of us happy!

Here's a ? I will throw out to everyone...any problem with using unswt applesauce subbing for oil??

Wed Dec 12 2001 21:11:00 Eastern US
Mindi (Mom of NOlan, 5, dx'd 4/01) from 64.12.104.42
Mike, that is interesting to know. Do they have anything other than the little packets? Is it the same measurements that is called for sugar?

Wed Dec 12 2001 21:11:32 Eastern US
Cassy (Nathan 19.5 mos,dx'd@15mos) from 216.130.4.245
Mike we love Splenda- but I have yet to bake with it-what are the ratios?

Wed Dec 12 2001 21:12:30 Eastern US
Mike Schurig, MS, RD, LD, CDE (Type 1 pumper, dx at 12) from 65.33.31.182
Yes, you can sub it tsp for tsp like regular sugar...which is very convenient..and YES it does come in bulk..I think it is 2 pd packs.

Wed Dec 12 2001 21:12:35 Eastern US
Mindi (Mom of NOlan, 5, dx'd 4/01) from 64.12.104.42
Mike - so can you make like chocolate chip cookies with Splenda - same carb ratio and things?

Wed Dec 12 2001 21:13:24 Eastern US
Mike Schurig, MS, RD, LD, CDE (Type 1 pumper, dx at 12) from 65.33.31.182
No more worries about overcompensating with Nutrasweet or saccharin...and no bitterness

Wed Dec 12 2001 21:13:47 Eastern US

I believe it's available on the Lifescan website

Mindi (Mom of NOlan, 5, dx'd 4/01) from 64.12.104.42
What type of dish would you prepare with unsw applesauce for example?

Wed Dec 12 2001 21:14:08 Eastern US
Mike Schurig, MS, RD, LD, CDE (Type 1 pumper, dx at 12) from 65.33.31.182
For the carb info...the Splenda contributes verrrry little carb...not enough to count...just count everything else...flour, chips, etc

Wed Dec 12 2001 21:14:17 Eastern US
Mindi (Mom of NOlan, 5, dx'd 4/01) from 64.12.104.42
Steph what is?

Wed Dec 12 2001 21:14:42 Eastern US
Steph Schwartz, RN, MPH, CDE (Moderator) from 207.172.148.136
Splenda

Wed Dec 12 2001 21:14:47 Eastern US
Mike Schurig, MS, RD, LD, CDE (Type 1 pumper, dx at 12) from 65.33.31.182
Try subbing applesauce for oil in recipes like carrot cake that call for lots of oil

Wed Dec 12 2001 21:15:27 Eastern US
Cassy (Nathan 19.5 mos,dx'd@15mos) from 216.130.4.245
Really so if it calls for a cup of sugar you use a whole cup of Splenda??-I think Splenda is much sweeter than sugar-don't you?

Wed Dec 12 2001 21:15:42 Eastern US
Mike Schurig, MS, RD, LD, CDE (Type 1 pumper, dx at 12) from 65.33.31.182
Splenda is an sweetener that is made from table sugar but does not break down in the body like table sugar

Wed Dec 12 2001 21:15:54 Eastern US
Mindi (Mom of NOlan, 5, dx'd 4/01) from 64.12.104.42
Mike so a regular size chocolate chip cookie made at home would be approx. the same. Around 17-20 carbs?

Wed Dec 12 2001 21:16:31 Eastern US
Heidyn (type 1 pumper) from 164.106.22.56
How much fat would something have to have(like something with both carbs and fat) to necessitate a square wave bolus?

Wed Dec 12 2001 21:16:36 Eastern US
Cassy (Nathan 19.5 mos,dx'd@15mos) from 216.130.4.245
I've used applesauce in chocolate cake recipes-love it-actually makes it more moist and much less fat

Wed Dec 12 2001 21:16:53 Eastern US
Mindi (Mom of NOlan, 5, dx'd 4/01) from 64.12.104.42
I used tyo make homemade chocolate chip cookies for Nolan all the time and I havent since he has been dx'd - because I dont know how to count them.

Mike Schurig, MS, RD, LD, CDE (Type 1 pumper, dx at 12) from 65.33.31.182
Probably a lil less, because of the lack of sugar...more like 11-12 grams of carb..I figured one time

I don't think I'm as careful as I should be about Nath's diet-I'm just so overjoyed when he actually eats-I don't really pay attention to what he's actually eating.....

Judith (David, 16, dx'd at age 2 months; Vanya, 17, dx'd at 6) from 65.171.1.74
Hi....
I see Mike also likes Splenda. Have only tried baking with it once, with less than spectacular results. Could be because Dave was the baker :-)

Mike Schurig, MS, RD, LD, CDE (Type 1 pumper, dx at 12) from 65.33.31.182

Judith (David, 16, dx'd at age 2 months; Vanya, 17, dx'd at 6) from 65.171.1.74

Judith, tell Dave to give it another shot...and yes it does carmelize and create a wonderful brown texture that is needed in some baked goods

That's good to know; thanks, Mike. I have a full box of it here. Initially ordered from the net, before it was in stores. The boys just use regular sugar most of the time. Do use some diet drinks. Nutrasweet gives me a headache; does the same to my daughter.
