My son, aged 9, was diagnosed with Type 1 diabetes when he was 6. As I would like to diversify his meals, I would like to prepare some puddings, but I have no idea what is the carbohydrates contents/100 grams for cornstarch or other starches.

Answer:

There are 90 grams of carbohydrate in 100 grams of cornstarch and tapioca (quick cooking or granulated). 100 grams of flour has about 76 grams of carbohydrate.
