Question:

From Jackson, Wisconsin, USA:

How long does it take for the blood glucose levels to stabilize after starting a gluten free diet for someone with both diabetes and celiac disease?

Answer:

In my experience, it take at least three to four months for the glucose levels to stabilize. Keep in mind that gut epithelium takes at least six months to completely heal after starting a gluten free diet.
